Indian Vegetarian Dinner Recipes

Folks, today I am going to share couple of Indian vegetarian dinner recipes. Indian cuisine has huge variety of traditional food dishes both vegetarian & non-vegetarian. Let’s talk about vegetarian dinner dishes.
Hyderabadi Veg Biryani



Ingredients:
  • Rice  – 2 cups
  • Green Peas – ½ cup
  • Carrots – ½ cup (chopped)
  • Potatoes – 2 medium (chopped)
  • Cauliflower – 1 cup
  • French Beans – ½ cup
  • Button Mushroom – 10 (chopped)
  • Bell Pepper – 1 medium (chopped)
  • Onion – 1 chopped
  • Ginger Garlic – 2 tbsp.
  • Yogurt – 1.5 cup
  • Red Chili Powder – 1 tsp.
  • Salt – as per taste
  • Cooking Oil – ½ cup
  • Tomato – 2 large
  • Turmeric Powder – ¼ tsp.
  • Green Chili – 2
  • Whole Garam Masala – 2 tbsp.
  • Bay Leave – 1
  • Cashew Nuts – 3 tbsp.
  • Raisins – 1 tbsp.
  • Almonds – 2 tbsp. (sliced)
  • Coriander & Mint Leaves – ½ cup
  • Saffron – ¼ tsp.
  • Rose Water – 1.5 tsp.
  • Milk – 4 tbsp.

Cooking Instructions:
  • Soak rice for 30 minutes and semi boiled in hot water
  • Strain and set aside
  • Heat the pan, add onions & ginger garlic paste, fry until golden brown
  • Add all vegetables, tomatoes, red & green chili, turmeric, whole spices, bay leave, mix and fry well
  • Add yogurt and fry well until oil gets separate from the masala
  • Fry cashews, almonds and raisin for a while and set aside
  • Now add coriander and mint leaves
  • Now add layer of vegetable gravy first then a layer of semi cooked rice, sprinkle milk, saffron, rose water, all nuts and repeat the same process of layering.
  • Cover the lid and seal it with dough for 20-25 minutes
  • Your hyderabadi veg biryani is ready to serve with raita and fresh salad




Rajma Chawal (Kidney Beans Curry with Rice)



Ingredients:
  • Rajma (kidney beans) – 1 cup
  • Green Chili  – 2 (chopped)
  • Ginger – 1 tsp. (chopped)
  • Garlic – 1 tsp. (chopped)
  • Onion – 2 (chopped)
  • Tomatoes – 3 large (chopped)
  • Red Chili Powder – 1 tsp.
  • Turmeric – ½ tsp.
  • Garam Masala – ¼ tsp.
  • Salt – as per taste
  • Cumin Seeds – 1 tsp.
  • Cooking oil – ¼ cup

Cooking Instructions:
  • Soak the rajma overnight
  • Wash and drain rajma well
  • Add onions, tomatoes, chilies, ginger, garlic and all other spices along with rajma and 2.5 cups of water in a pressure cooker
  • Cover and pressure cook it for good 20-25 minutes
  • Once rajma beans gets tender simmer it on medium heat
  • Add oil and let it cook without cover for 8-10 minutes until gravy gets thicker
  • Sprinkle coriander leaves and garam masala on top
  • Rajma Curry is ready to serve with boiled white rice
